I was laying awake last night watching the moon as it peeped into my window. I was supposed to be sleeping but the night was so breezy and perfect it seemed a waste to miss part it. Even if it was only part of it. Even the dogs next door, which are rarely quiet seemed to be enjoying the peace.


I have been reading on Lentils and Rice (http://lentilsandrice.blogspot.com/), my friend Robyn's blog about her stretchy beans.
Well after discussing it with Beloved we have decided that for 2 weeks we are going to experiment ourselves with stretchy beans. beginning this week with Pintos. I plan to follow closely her recipes, as closely as I can. (You know by now I, am a tweaker!)
Tonight will be beans with brown rice and chapatis.


tomorrow will be tacos, with a deviation, I will brown a little ground beef to go with the beans and rice.
My goal in this is not so much money motivated, though saving on groceries always helps! It is however health related. Beloved and I are both over weight and are both tired of it. Personally I feel my energy level is not what it should be, and I think too much processed and sugar laden food is why.


So we will begin tonight with salads, with a small does of dressing (1,000 island for him and ranch for me, both kraft fat free) We will drink the last of the sweet ice tea and then tomorrow it will be water.
Beloved and I have committed ourselves to this for 14 days.


Well off to begin the chapatis. The beans have been cooking all day!

mel....i'm excited to hear how it goes and hoping you have great success....dh and i are always interested in a healthier lifestyle. :)

Sounds like a plan! I love the Lentils and Rice blog. I did her stretchy pintos a week or two ago! I followed the recipes exactly, and they tasted realy good.

We eat like this and have for many years. It has the benefit of really saving money, but is also much better for your health. We are in our mid sixties, no medications, pretty much normal weight (I could lose ten pounds, I think), no signs of diabetes or any other health issues.

Beans, lentils, brown rice, veggies, fruit and whole grains not only taste good, they are good for you.

Good luck for the 2 weeks Mel. We eat very lean around here and pretty much alays have. You won't regret it. But I always encourage people to make it a "life style choice", not just a temporary "diet".

Thank you so much for posting this - I am loving that blog, and getting some great ideas from it! I don't think I can get my hubby on board, but I love beans, and found some great ideas for ways to switch them up day to day. He works nights - Kitteninhat and I could 'go stretchy' for our suppers!
