I think I might create a new recipe, mel's 2 day beans!
The beans got done last night, after Beloved had decided on something else for supper. So that makes today, I guess day 3 and we finally had the beans and brown rice.
I made home made tortillas, simple with the same recipe as chapatis, but they do not need to rest for an hour before rolling. I used whole wheat mixed with white flour.

Over all reaction, good but needs more spice (now had they cooked in the timely manner, the spices would have been stronger!) Now, tomorrow we will do tacos, for which I will add a bit of ground beef, and sour cream. (Beloved wants cheese too) as well as tomatoes. It did satisfy my craving for beans and rice and it gave me a sense of satisfaction to have cooked the meal from scratch, and knowing that tomorrow (Thursday is a busy day for me generally) supper is mostly made, just make more tortillas, cook the meat, warm the next batch of beans, and off we go!

So now I am tired, because it was so pleasant today I was able to finish the kitchen and the laundry, I also watered the plants and helped Beloved hang a new porch lamp.
Tonight I retire to bed, a full, and happy homemaker!

:) This made me smile - just hearing about the in and out of someone's day always does.

Do you soak your beans before you cook them? I almost always do, and it seems to help quite a lot with getting them cooked! I've even been known to soak them all day, put them in the crockpot on low and go to bed! Whatever works, yes?

LOL yes I soaked them. the problem was the outlets quit working, one on Monday and the other yesterday. So I tried cooking them on the stove, keep in mind they had been "soaking" in the crock pot for over 24 hours!
Giggle, in the end it was well worth it!

Good job, Mel! Your post made me smile too, because I'm learning how to make almost everything by scratch (is that a phrase?), and I know the sense of satisfaction it gives me to fill my family's tummy with food I made with my own hands. It's a great feeling! :)
